Reasons to Remove Garlic Scapes
Garlic scapes are the flower stems that emerge from hardneck garlic varieties. If left, they will blossom into flowers and produce seeds. Removing the scapes is important, as it allows the plant to redirect its energy on developing the garlic bulb instead of the flower. Not only does this grow larger garlic bulbs, but it also gives you an extra harvest! Garlic scapes are edible and can be used in a variety of dishes. Their flavor is mild, making them a good substitute for garlic and chives.
The Ideal Time to Remove Garlic Scapes
We live in Zone 6b, and our garlic scapes usually appear from late May to mid-June. We’ve found that the best time to harvest them is when they begin to curl. While you can pick them earlier, they will be small and result in a smaller harvest. However, waiting too long will result in woody scapes that are less desirable for eating.
How to Harvest Garlic Scapes
You can use pruners, scissors, or even snap the scapes off by hand. They are easy to cut or break off. I like to cut them close to where they emerge from the garlic plant’s leaves. It’s important to not cut any of the leaves off of the garlic plant, as this will hinder the growth of the garlic bulb.
Preserving Garlic Scapes
Garlic scapes can be stored in the refrigerator for a couple of weeks and used fresh. However, since we cannot go through ours quickly enough, I prefer to prepare and freeze them. I chop them up using a knife or food chopper and store them in a ziplock bag or glass container for easy access when cooking. Garlic scapes can also be froze whole. Freezing the garlic scapes allows you to enjoy them throughout the season! They are great in stir-fries, as a base for pesto, or as a flavorful addition to any dish needs it. Treat them just like minced garlic!
